Ingredients:
2 cups frozen cranberries
1/2 cup sugar
2 tablespoons light corn syrup (Karo is the best!)
4 tablespoons water
6 cups vodka
Preparation:
1. Heat the cranberries and sugar as you gently press them to break the flesh. Bring to a boil and stir constantly until all of the sugar is dissolved, about 5 minutes.
2. Add the corn syrup and mix well.
3. Mix the cranberry syrup mixture with the vodka, water, and rum.
4. Store in a sealed container and allow it to rest in a cool, dark place for 2 weeks.
5. Strain into a large pitcher, reserving the cranberries. Pour liquid into bottles, using a funnel and add some cranberries to the liquid for decoration.
6. This is best served ice cold from the freezer. You can freeze leftover infused cranberries and place several on a stick as a garnish when serving.

The liquid will be a pretty deep red color. Make a pretty label to decorate your bottle and include a recipe and you've got a fantastic gift. Here's a great source for glass bottles.

ReplyDeleteI love making infusions! My fave in pineapple in sherry - perfect for summer drinks!
ReplyDeleteHmmmm... If I want to have this in time for Christmas, I'd better get infusing!
