While I was perusing the cheese department, I noticed some cheese tortes on display. The craisin currant walnut topped Brie looked delicious, but it cost $19.99 a pound. So I naively thought to myself that the cheese torte couldn’t weigh that much. Little did I know that the torte weighed in at 3 pounds. No way was I going to pay $60 for a glamorous cheese ball!
So I decided to investigate the cheese department a little bit more carefully with hopes of re-creating this masterpiece on my own. The search for ingredients was fairly easy and the end result was amazing.
Here’s what I used to make my Craisin Walnut Caramel topped Brie.
~ Soft Blue Brie cheese
~ Mascarpone cheese
~ Craisins
~ Chopped Walnuts
~ Caramel sauce (not pictured)
Prepare the cheese torte with ingredients that are room temperature for best results. First, split the circle of Brie in half like a 2 layer cake. Then, fill the center of the 2 layers with craisins and walnuts. Drizzle a little bit of caramel on this filling.
Spread the Mascarpone cheese on the top and sides of the cheese torte. I love this step! Doesn't it look like icing on a cake?
Add walnuts to the top and sides of the torte and adorn with craisins. At this point, you may want to mold the torte back into shape and press the other ingredients into the cheese. Wax paper makes this easy. Place the torte back into the refrigerator until about 30 minutes before serving.
Drizzle with caramel sauce to finish the torte and serve with bread or crackers. The Walnut Craisin Caramel torte was a huge hit at yesterday's party. And the best part was that it only cost around $14 to make.
